Subject: Spam Casserole

For you "Hawaiian Steak" (SPAM) lovers. I think this recipe
is older than we are, as Pansy Miyamoto, Hakalau Elem. & Inter.
School cafeteria manager, use to make it for school lunch.
My brother, Gary, thought that adding potatoes might make it
better. I tried it and it does. It's good for breakfast as
the meat dish, for lunch or dinner.

2 cans spam
1 (17 oz) can cream corn
1 (17 oz) can regular corn
1/2 diced round onion
1/2 cup milk
1/2 cup quaker oat meal
2 eggs
2 sliced potatoes
pepper to taste, no salt is needed as spam is kinda salty.

Mash spam with hands in a carrerole dish, 9-1/2" x 10" x 2" deep.
Mix in other ingredients, except the potatoes.
Last slide sliced potatoes in a standing up sideways
position. Bake for 50 minutes at 375 degrees. If you like
a really crispy topping, add crushed potato chips on top about
5 mins. before done. Enjoy!!! Simple and tasty!!!!
