Lance's Italian Sausage Spaghetti

Subject: Italian Sausage Spaghetti

For those of you who like to try different recipes, here's my
Italian sausage spagetti recipe. If you don't like the flavor
of italian sausage, substitute other types of meat. Enjoy!

Italian sausage spagetti

Take 5 italian sausage out of casing and brown in pan. Add 1 chopped
round onion, 2 stalks celery chopped, and 3 chopped garlic cloves.
Saute till onions are translucent.

Add 1 cup white wine and simmer till reduce to half. After mashing with
hands one 14-1/2 oz. can progresso brand whole plum tomatoes, add to pan.
Do not use stewing tomatoes - too acidic.

Add one 8 oz can tomato sauce, 8 leaves freshi basil, 1 T. fresh rosemary,
3 pieces bay leaf, 1 T fresh thyme, 1 T fresh oregano, salt & pepper to taste.
(Adjust amount of herbs to your taste), one - 4 oz can mushroom, 1 or 2 T sugar
to reduce acidity, 1 or 2 T chinese golden mountain brand soya bean sauce or
1 or 2 T Magge seasoning (for those of you who like a stronger flavor, use
Worchester sauce), one 4 oz can sliced black olives. Simmer for about 30
minutes. Just before serving add 2 slices Kraft swiss cheese and about 1/4 can
carnation evaporated milk to mellow the tomato sauce flavor. Add chili pepper
flakes to your own taste. Simmer to blend flavor and serve.
