Lance's Chuck Roast

Another easy and flavorful recipe of my mom's.

Salt, pepper and flour chuck roast and brown in a pot with little
oil. Take chuck roast out of pot, add 1 medium sliced round
onion to pot and saute till caramelized and translucent, then add
3 cloves sliced garlic and continue sauting. Add 2 cups red
wine and reduce till alcohol is evaporated. Mix in a package
of Lipton Onion Soup Mix. Add 2 cans of Progresso Brand Peeled
Tomatoes that you have crushed with our hands. Put chuck roast
back in pot and bake at 350 degrees for 1 hour. After the
hour has passed add the chopped peeled potatoes, carrots, and
fresh mushrooms and bake for another hour. The meat just falls apart.
Salt and pepper to taste. If sauce is to thin for your flavor,
add cornstarch & water mixture. Or a little heavy cream to
mellow the flavor.
