Lance's Chicken & Green Peas

Subject: Chicken & Green Peas

well, last night this dish started of as chicken long rice. I didn't
have fresh tomatoes, so it ended up as, I guess you could call it
chicken with green peas. Improvised as I went along.
If you like green peas, try it. Kinda like the filipino's pork and peas
with a little twist in flavor.

First brown about 2-1/2 lbs. chicken drummettes. Take drummettes out
of the pot and add 1 sliced round onion and 4 slices of ginger to pot
and saute till round onions have caremalilzed. Put drummettes back
into the pot, and add a can of shredded bamboo shoots (adds crunch)
and a 14 oz. can Progresso Brand Crushed Tomatoes in Puree. Saute for
about 5 to 10 minutes to reduce the liquid of the tomatoes. Add a can of
chicken broth and one package Lipton Onion Soup Mix and about 1-1/2 T.
sugar. Simmer for about 1 hour and add another can of chicken broth.
Simmer for another hour until chicken meat falls off the bones.
Add frozen green peas and simmer for a little while longer till the flavor
of green peas mixes into the stew. That's it. This morning it tasted
better than last night. I guess letting it sit overnight in the refri
increased the flavor.
