Subject: Chicken Casserole

Just found this recipes in my recipe book. It was given to me
by a former co-worker awhile back. Since the amount is kinda
alot for one person, I never made it. Hopefully one of you
will get ambitious and try it. It sounds good.

Chicken Casserole

5 lb. box of chicken thighs
3 cups of water
salt to taste
2 cloves garlic
** 2 boxes stove top stuffing (prepared according to
directions and set aside)
1 can cream of mushroom soup
1 can cream of chicken soup
(mix cream of mushroom and chicken soup together)
1/2 block butter
2 cups grated cheese
(optional: diced or sliced water chestnuts, sliced celery & mushroom)

** may cut down stuffing to one box

1. Cook chicken in 3 cups water with salt and garlic until meat can
be separated from bone. Cool, debone chicken and shred
(Save water which is now the chicken stock)
2. Dot 9" x 13" pan with butter
3. Place ingredients in layers half of shredded chicken
cooked stuffing half of soup over stuffing rest of shredded
chicken remaining soup on top of chicken (May spread optional
ingredients in-between layers)
4. Top grated cheese over the soup
5. Pour 1 to 1-1/2 cup chicken stock over top layer
6. Bake at 350 degrees for 45 minutes to an hour.
